Rebecca’s Top Secert Chili

Ingredients:

  • – 2 lbs grass fed ground beef
  • – 1/4 cup olive oil for sautéing
  • – 1 medium onion, chopped
  • – 1 medium green pepper, chopped
  • – 1 large garlic clove, minced
  • – 1 pack sliced mushrooms
  • – 32 oz marinara sauce
  • – 1 – 28oz can fire roasted diced tomotoes
  • – 1 – 15oz can dark red kidney beans
  • – 1 – 15oz can pinto beans
  • – 1 – 1 – 7oz jar tomato paste
  • – 1 tbsp oregano
  • – 1/2 tsp cumin
  • – 2-3 tbsp chili powder
  • – 1/2 tsp cayenne
  • – 1 bay leaf

Instructions:

  1. Saute peppers, onion and garlic in olive oil over low-medium heat
    x 5 minutes or until almost soft, add mushrooms until soft.
  2. Add spices.
  3. Add can of fire roasted tomatoes until caramelized
  4. Add marinara and tomato paste and bring all ingredients to a boil.
  5. Add 2 lbs raw ground meat, then add beans.
  6. Stir often to ensure chili does not stick to bottom of pot, over medium heat x 1 hour. Reduce heat to low and simmer x 4 hours (if you are able to), stirring occasionally.
